Taiwanese Beef Noodle Soup

1-1.5 lbs. beef shank, brisket, tendon

bok choy

noodles- Handpulled/cut noodle recipe

Broth:

  • 2 stalks green onions
  • 1 yellow onion, 2-3 carrots,
  • 1 tomato
  • 8 cloves garlic
  • 3in ginger
  • 6 c. broth or water
  • 6 Tbsp soy sauce

Spices:

  • 1/2 tsp fennel
  • 2 star anise
  • 8 whole cloves
  • 1 1/2 tsp sichaun peppercorns
  • 1/2 tsp cinnamon
  • 4 dried chilies
  • 4 Tbsp rice wine
